Ingredients:
For the base
200 g oat biscuits
120 g butter
For the filling
100 g cream
80 g sugar
40 g butter
250 g low-fat quark
400 g double cream cheese
2 eggs
20 g ground Ceylon cinnamon
1 pack of Bourbon vanilla sugar
Whipped cream to serve as desired
Preparation:
- First preheat the oven to 160 degrees top/bottom heat (fan oven: 140 degrees). Line the springform pan base (⌀ 26 cm) with baking paper.
- Then finely crumble the biscuits in a food processor. Melt the butter and add to the crumbs, stir.
- Spread the crumb mixture on the base of the springform pan and press it down firmly. Set aside.
- Mix the quark with cream cheese and eggs until smooth. Add liquid cream and sugar.
- Pour the quark cream onto the crumb base and smooth it out. Melt the butter, stir in the cinnamon and vanilla sugar.
- Next, pour the liquid cinnamon butter onto the quark mixture, spread it evenly and use a teaspoon handle to lightly marble the surface of the cake.
- Now bake in the lower third of the oven for around 55 minutes. Allow to cool for at least 2 hours.
- Serve with whipped cream if desired.
