The Basic Recipe for Sweet and Savory Crepes

Crepes are a sweet or savory dish, it all depends on the type of ingredients you want to stuff them with. You can make them with eggs, flour, milk, butter and a pinch of salt, and you can cook them in just a few minutes. Starting from the basic preparation that we will explain to you in this recipe, we can then stuff them as we wish.

Ingredients

  • butter: 60gr

Preparation

  1. To prepare the pancake mixture, put the eggs in a bowl, beat them then add the milk and a pinch of salt.
  2. Sift the flour and put it into the mixture, add the melted and cooled butter and mix everything, eliminating any lumps until you obtain a homogeneous mixture. Let sit in the refrigerator for at least 30 minutes.
  3. To cook the pancakes, use a special frying pan of about 20 cm, put it on the fire with a little butter and pour the mixture into it, creating a thin and uniform round layer.
  4. Wait a minute and if the crepe layer in contact with the pan becomes golden/brown, then one side is cooked, so move on to cooking the other side (9).
    Once cooked, the pancakes can be stuffed both hot and cold. There are those who fold them in half with the stuffing inside, those who fold them into four parts, and finally there are those who prefer to roll them up.
  5. When I cook them but I don’t use them all at once, I leave them in the refrigerator (cooked pancakes can be kept for a maximum of two days, while raw dough can be kept for a maximum of ten hours) and when I want to use them as a starter, cutting the pancakes into several long and thin strips as if they were already cooked tagliatelle, then I season them with tomato sauce or with cream and mushrooms. Crepes are perfect as a single dish as well as a starter, first course, second course or dessert. It all depends on what you use it for.
