Ingredients

  • 1 kg tripe
  • 2 Tomatoes (chopped)
  • 2 onions (chopped)
  • 4 cloves of garlic (chopped)
  • 2 green morrones (chopped)
  • 2 bay leaves
  • c/n of Water
  • Salt to taste
  • Pepper to taste
  • Oil

Preparation

  1. To begin, wash the tripe well under running water and cut it into smaller pieces.
  2. In a pressure cooker, place the cut tripe and add enough water to cover them. Cook for 20 minutes after pressing to tenderize the meat.
  3. Next step, drain the water and reserve the cooked tripe.
  4. On the other hand, in a large frying pan, heat a little oil and add the onion and garlic. Sauté until golden brown.
  5. Then, add the tomato, bell peppers and bay leaves. Sauté for a few more minutes.
  6. Then, add the cooked tripe pieces to the pan and mix well with the seasoning.
  7. Add enough water to cover the entire tripe and season with salt and pepper to taste.
  8. Simmer for about 1 hour, or until all the tripe pieces are tender and the broth has reduced and thickened.

Serve the hot mondongo and top it with fresh pan or rice for comforting and delicious food!

TIPS:

  • Be sure to clean the tripe well before cooking to remove any residue.
  • Cut the entire tripe into uniform pieces so that they cook evenly.
  • If you don’t have a pressure cooker, you can cook the tripe in a conventional pot, but the cooking time will be longer.
  • Check the liquid level while cooking the tripe. If necessary, add more water to prevent them from drying out.
  • You can adjust the seasonings according to your personal preferences. Experiment with different herbs and spices for a unique flavor.
  • For a more concentrated broth, you can reduce the amount of liquid added and simmer for longer.
