Ingredients: 500g fresh shrimp shells and heads (you can use already peeled shrimp and reserve the shells and heads), 2 tablespoons olive oil, 1 large onion, chopped, 2 carrots, cut into large pieces, 2 stalks of celery, cut into large pieces, 4 cloves of garlic, crushed, 2 tomatoes, cut into quarters, 1 bay leaf, 1 sprig of fresh thyme, 1 sprig of fresh parsley, 1 liter of water, Salt and pepper to taste

Preparation: In a large pot, heat the olive oil over medium-high heat. Add the shrimp shells and heads and sauté for a few minutes until lightly browned and fragrant. Add the onion, carrots, celery and garlic to the pot. Cook, stirring occasionally, for about 5 minutes until the vegetables are soft. Add the tomatoes, bay leaf, thyme and parsley to the pot. Cook for a few more minutes, until the tomatoes soften. Pour the water into the pot and bring the broth to a boil. Reduce the heat to low and let the broth simmer for about 30 minutes to allow the flavors to blend. After the cooking time has passed, remove the pot from the heat and strain the broth to remove the peels, heads and vegetables. Squeeze the shells and heads well to extract all the flavor. Pour the strained broth back into the pot and reheat over medium heat. Season with salt and pepper to taste.
