COOKIES FILLED WITH JAM

Jam-filled cookies are a delicious classic that combines the tenderness of cookies with the fruity and sweet flavor of jam. Jam-filled cookies are a charming expression of baking, where the softness of the dough meets the vibrant sweetness of the jam. The preparation of these delicacies begins with a buttery, sweet dough, which is cut into circles and baked to a perfectly tender texture. These jam-filled cookies are ideal to enjoy for any occasion, from snacks to special events. Here is a basic recipe to make these delicious cookies.

Ingredients:

200g butter at room temperature.
200g of sugar.
2 eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
Jam of your choice (strawberry, raspberry, apricot, etc.)
Instructions:

Preheat the oven to 180°C and line a baking tray with parchment paper. In a large bowl, beat the butter and sugar until the mixture is light and creamy. Add the egg and vanilla extract, and continue beating until well incorporated. In another bowl, mix the flour and salt. Gradually add the dry ingredients to the butter mixture and mix until smooth. Divide the dough into two parts. Wrap each portion in plastic wrap and refrigerate for at least 30 minutes. On a floured surface, roll out each portion of dough to a thickness of approximately 0.5 cm. Using a round cookie cutter, cut circles in half of the portions and place them on the prepared baking sheet. On the other half of the slices, use a smaller cutter to make a hole in the center of each circle. These will be the tops of the cookies. Bake the hole-less cookies and the hole cookies separately for 15 minutes or until the edges are lightly browned. Let the cookies cool completely. Spread jam on the cookies without a hole and place the cookies with a hole on top to make a sandwich.
Enjoy this classic and delicious combination!
