The ribs are seasoned with salt and pepper, then generously basted with a homemade or store-bought BBQ sauce. The BBQ sauce is the heart of this dish, and can vary in flavor depending on personal preference. Homemade versions typically include a combination of ketchup, ketchup, apple cider vinegar, honey, Worcestershire sauce, mustard, garlic, and spices like paprika and chili powder for a touch of heat. This sauce is generously applied over the ribs, which are then slowly cooked in the oven at a low temperature.

Ingredients:  For the Ribs:  2 racks of pork ribs (approximately 2 kg), Salt to taste, Pepper to taste, Garlic powder to taste, Paprika to taste, Onion powder to taste. For the BBQ Sauce: 1 cup ketchup, 1/3 cup apple cider vinegar, 1/4 cup honey, 1/4 cup brown sugar, 2 tablespoons Worcestershire sauce, 1 tablespoon Dijon mustard,
Garlic powder, 1 teaspoon onion powder, 1/2 teaspoon ground black pepper, 1/2 tablespoon smoked paprika, 1/4 teaspoon cayenne (optional for a spicy touch).

Preparation:  Preheat the oven to 150°C. Clean the ribs and remove the silver membrane from the back of the ribs. In a small bowl, mix together the salt, pepper, garlic powder, paprika, and onion powder. This mixture will be used as a seasoning for the ribs. Spread the seasoning mixture evenly over both sides of the ribs. Wrap each rack of ribs in aluminum foil and place on a baking sheet. Bake the ribs in the preheated oven for about 2.5 to 3 hours or until tender. You can check doneness when the meat separates easily from the bone. In a saucepan, combine all the BBQ sauce ingredients. Cook over medium heat and bring the mixture to a boil. Reduce heat and simmer for about 10-15 minutes, stirring occasionally. Remove the sauce from the heat and let it cool. Heat the grill to medium-high heat or preheat the oven to a higher temperature. If using the grill, brush the ribs with the BBQ sauce and grill for about 10 minutes on each side or until a caramelized crust forms. If you use the oven, raise the temperature to 220°C. Cover the ribs with the sauce and bake for 10-15 minutes or until the sauce caramelizes. Remove the ribs from the heat or oven, let them rest for a few minutes, and then cut them between the bones. Serve the ribs with additional BBQ sauce on the side. Ready! Now you have delicious pork ribs in BBQ sauce. Enjoy your food!
