Stuffed Peppers are a very versatile dish, since they can be prepared with a wide variety of peppers and with an infinite number of fillings.

Ingredients:

4 or 6 pieces of Bell pepper
500 grams of ground beef
2 Carrots
250 grams of Peas
1 large potato
1 Onion
2 cloves of Garlic
1 pinch of Salt
1 pinch of Pepper
2 tablespoons of Oil

We are going to start by chopping the carrot and potato into small cubes, once ready, we place them in a saucepan with enough boiling water so that they cook very well, then we also add the peas and let it all cook together, adding a pinch of salt. This process can take approximately 20 minutes. Once the vegetables are cooked, we remove them from the heat, drain and set aside.

In another deep saucepan we add the oil, heat it over medium heat and, once hot, add the chopped onion and garlic so that they are sautéed, we add a pinch of salt.

Once the onion is transparent, to continue with the stuffing of the peppers, we add the ground beef to the saucepan and stir to incorporate it perfectly. We let it cook for approximately 15 minutes, stirring constantly so that the cooking is uniform. .

Meanwhile, we take the peppers and cut off the top part with the stem to form a kind of lid, then we devein the chiles and clean them very well inside. We reserve them for a moment.

On the other hand, once the ground meat is cooked, we add the vegetables and let the filling ingredients finish cooking together.

When the ground meat and vegetables are ready, we proceed to stuff the peppers and to do this, we take a little of the stew and completely cover the inside of the chiles.

Once filled, we place them on a baking tray greased with a little butter, we place a little string cheese on top, or any other type of cheese, we add the lids so that they are also cooked on the side, not on top of the chiles, and we bake the peppers stuffed with ground meat for 10 minutes at 170 °C.

After this time, the peppers stuffed with ground meat are ready to enjoy. They are perfect accompanying them with a little white rice or creamed corn.
