Tuna pancakes: the recipe for an easy and light appetizer

Ingredients
TUNA IN OIL, DRAINED 300 g (2 1/3 cups)
EGGS 2
BREAD CRUMBS 60 g (1 cup)
PARSLEY, CHOPPED 1 clump
MIXED PEPPER GRAINS
EXTRA VIRGIN OLIVE OIL
BREADcrumbs 1 tablespoon
FOR THE COVERING:
EGGS 3
SALT
FLOUR
BREADcrumbs

How to make tuna patties:

Step 1
Remove the soft part of the bread and crumble it.

Transfer the breadcrumbs and chopped parsley to a bowl and mix with the drained tuna.

Step 3
Add the eggs and a pinch of freshly ground pepper. Mix well to combine all the ingredients.

Step 4
Add 2 tablespoons of breadcrumbs and mix again; if the mixture is still very soft and sticky, add a little more.

Step 5
Create 6 flattened oval patties.

Step 6
Sprinkle with flour, pressing with your fingers so that it sticks well.

Step 7
Soak the pancakes in the previously beaten eggs.

Remove the patties from the egg mixture and coat them with breadcrumbs, making sure the entire surface of each patty is well covered.

Heat a pan with the olive oil. You can test if the oil has reached temperature by throwing in a pinch of breadcrumbs: if they surface and start to bubble, the oil will have reached temperature. Carefully place the patties on the pan. You will notice tiny bubbles forming around each patty. Leave to cook for a few minutes.

Step 10
Flip the patties using a spatula and a spoon. Cook on both sides until golden brown. Transfer to a plate covered with paper towels, which will absorb excess oil.

Step 11
Transfer the patties to a platter and serve immediately, accompanied by a green salad and dipping sauce. Appreciate!
