INGREDIENTS:
200 ml (1 cup) lukewarm milk
100 ml (1/2 cup) lukewarm water
20 g (3 tbsp) sugar
7g dry yeast
70 ml (1/4 cup) vegetable oil
1 egg white
540 g (4 1/2 cups) all-purpose flour
6g (1 tsp) salt
60g (1/4 cup) butter + for brushing
150g feta cheese
50g cottage cheese
Egg yolk + milk
Sesame seeds
PROCESS
- In a bowl add the milk, water, sugar, yeast, vegetable oil and egg white and mix. Add flour, salt and continue mixing.
- When the dough begins to form, knead it with your hands. Add the butter and continue to knead to obtain a smooth and elastic dough. Cover with cling film and let rise for 2 hours, or until doubled in size.
- Mix the feta cheese and curd to prepare them for the filling of the buns.
- When the time is up, remove the dough from the bowl and transfer it to the work surface. Divide the dough into 12 equal pieces and form into balls.
- Roll out each ball and brush with butter. Spread the cheese mixture on one side and spread it out. Flatten it a bit and form the shape of the knot.
- Transfer the knots to the baking sheet lined with parchment paper, cover them with a kitchen towel and let them rise for 30 minutes.
- After 20 minutes brush the knots with egg yolk + milk and sprinkle with sesame seeds. Transfer to the oven and bake at 180°C/360°F for 35 minutes, or until golden brown.
