Cookies are one such food preparation that instantly takes us back to our childhood days! With the changing food trends and the easy availability of convenience foods, cookie dough has become more of a regular food that we can easily find in a supermarket.
While store brought cookie dough is a very fine product, we associate cookies made with traditional cookie dough with our childhood days and the endless memories it brings back with every bite… This shortbread recipe is for those who wish to recreate the same experience in their home and give their loved ones a string to string together beautiful memories.
Here is a very simple recipe of the classic dough for shortcrust pastry biscuits, with which you can indulge yourself according to the taste preferences of the members of your family. Then, you can add a few chocolate chips or chopped nuts to the batter, to create a chocolate or nutty version of the classic recipe. Alternatively, you can also spice it up a bit with starfruit seeds, ground cardamom, ground cinnamon, or cumin seeds for a spicy shortbread variation.
You can also decorate the cookies with melted chocolate, colorful sugar coated candies, thick icing sugar paste and give them to your loved ones too… Just make sure you cool the cookies well before pouring in the decorating paste to create a beautiful gift.
Based on the recent health cooking pounding, you can also reduce the amount of butter to about 70g, but it will make the final version firmer and hold its molded shape much better giving a less thin final version of your favorite shortbread biscuits !

Pick up the dough with dry hands and roll it into a ball with your hands. Now cover the pan with aluminum foil. Wrap the cookie dough in cling film and freeze the cookie dough for at least 20-30 minutes before using. Cut small pieces of dough with your fingers and arrange small flattened ¼-inch-high discs of cookie dough at least 3 inches apart on the baking sheet. Now bake the biscuits in the preheated oven at 220°C for 8-10 minutes until the biscuits are cooked through and take on a nice golden color on the surface. Transfer the biscuits to a cooling rack and enjoy your meal!
