INGREDIENTS FOR 8 PEOPLE
- 1 puff pastry
- 1 liter Semi-skimmed milk
- 3 Eggs
- 160 g sugar
- 100 g Maïzena
- 2 sachets Vanilla sugar
- 3 tbsp Vanilla extract
- ½ tsp Vanilla powder
PREPARATION
Line a buttered and floured mold with the dough, and prick the bottom and edges with the tines of a fork. Refrigerate while you prepare the filling. Preheat oven to 180°c.
Using an electric whisk, beat the eggs with the cornflour, vanilla extract and 125 ml milk (taken from the liter of milk in the recipe) in a salad bowl.
Pour the remaining milk into a saucepan, with the vanilla sugar, sugar and vanilla powder (or vanilla pod, split in half lengthways and scraped out). Bring to the boil. Pour the boiling vanilla-sweetened milk over the egg mixture while beating (electric whisk). Pour everything back into the saucepan and return to very low heat, stirring constantly with a wooden spatula. Leave to simmer for a few seconds, but no longer, as the mixture needs to thicken slightly.
To finish
Pour the mixture over the pastry (removing the vanilla pod if you’ve used one) poked into the tin and bake for 40 minutes at 180°c. Cover with aluminum foil if necessary for the last 5 minutes. Cool completely before unmolding, cutting and serving. Keep refrigerated.
