Here is a recipe of Mhajeb harin it is a kind of puff pastry, made with semouline, stuffed most often with onion and tomato.
Ingredients
4 measures of semouline or fine semolina
1 measure of flour
Salt according to the quantity
Warm water
Oil or mutton fat.
Onions
Canned tomato
Bell pepper
Peppers
Salt, pepper, paprika, coriander, lots of garlic and harissa
Preparation
Mix semolina, flour and salt and then mix with water until you get a soft and elastic dough with a good kneading.
Form balls the size of mandarins with the help of oil and put in an oiled tray, cover with a transparent film and let rest for a maximum of 4 hours.
On an oiled work surface, roll out a ball of dough, stretching it in a circular fashion.
Sprinkle with oil and fold in half. On one end, place a good tablespoon of stuffing and the cheese of your choice.
Cover with the opposite side and then the other two to form a square.
Place on a hot baking sheet, when the first side is golden brown, turn over and cook the second side.
Continue until the dough and filling are used up.
