Today I propose you the recipe of the Liège waffles, melting and crispy waffles as you wish.
Ingredients
375 gr of flour
135 ml of milk
35 g fresh yeast
2 eggs
1/2 teaspoon of salt
1 sachet of vanilla sugar
200 gr of butter
250 gr of pearl sugar (150 gr will be enough)
Preparation
In a saucepan heat the milk and the butter cut into pieces until the butter is melted. Set aside.
In a salad bowl or in the bowl of the mixer, put the dry ingredients, namely the flour, the salt, the vanilla sugar and mix briefly then make a well and pour in the beaten eggs and the crumbled yeast diluted in a bit of warm milk. Turn on the mixer at speed 1 and start kneading while adding the warm melted milk and butter mixture for 5 minutes.
Add the pearl sugar to the dough and mix gently.
Cover the dough with a cloth and let it rest for 30 minutes in a draft-free place.
Preheat the waffle iron, then take balls of dough directly from the bowl, place them in the waffle iron and let your waffles cook for 3 to 4 minutes until they are golden brown.
