Sugar Donuts are deep fried, powdered sugar coated cupcakes that are ideal for breakfast or snack time. They are easy to make and offer instant sweet satisfaction with every bite.
Ingredients
150 mL (2/3 cup) warm milk
3 g (1 tsp) dry yeast
750 g (6 cups) all-purpose flour
2 eggs
120 g (1/2 cup) sugar
300 g boiled potatoes
80 g (5 tablespoons) melted butter
2 g (1 tsp.) lemon zest
Vegetable oil (for frying)
Sugar (for coating)
Preparation
In a bowl, mix the milk with the dry yeast, set aside.
In another bowl, mix flour, boiled potatoes and sugar, mix well.
Add eggs, yeast mixture and stir to combine.
Add lemon zest and melted butter and continue to knead the dough with your hands until it becomes elastic.
Form the dough into a ball, cover with plastic wrap and let rise for 3 hours.
Transfer the dough to a work surface and roll with a pin. Use a bowl to cut out 8 to 9 cm diameter circles and a smaller bowl or glass to cut out the doughnut hole.
Place each doughnut on a sheet of baking paper and let stand for 1 hour.
Fry fritters in hot oil for 2-3 minutes on each side.
Coat with sugar and serve.
