Chocolate Mousse

So simple and so good

Serves 6

1 bar of chocolate (200 g)
50 g of butter
3 tablespoons of sugar
6 eggs
1 small jar of fresh cream (10cl)
2 squares of white chocolate and hazelnut chips

Melt the butter in a saucepan.

Keep 40g of chocolate and break the rest into pieces.

Add the chocolate to the butter, cook over low heat and stir well to obtain a “smooth” mixture.

Let the mixture cool.

Meanwhile, break the eggs, separating the yolks from the whites.

Mix the yolks with the sugar then add the chocolate-butter mixture and the fresh cream.

Beat the egg whites until stiff and fold them into the mixture.

Lift your wooden spoon to aerate the mixture as much as possible, the mousse will be lighter.

Put the mixture in individual ramekins.

For decoration, grate the remaining dark chocolate into pieces.

Do the same with the white chocolate.

Sprinkle the mousse with these chocolate shavings and pieces of hazelnut.
