INGREDIENTS

30 g (4 tablespoons) cocoa powder;

60 ml (¼ cup) of water;

500 ml (2 cups) of milk;

400 ml (1 ¾ cups) of cream;

60 g (5 tablespoons) of sugar;

100 g (6 tablespoons) condensed milk;

16 g (5 tsp) gelatin;

80 ml (⅓ cup) of water.

METHOD

Whisk the cocoa powder with 60 ml of water until you obtain a smooth paste.Heat the milk over medium heat and dissolve the cocoa paste in it.Bloom gelatin in 80 ml of lukewarm water.Add the gelatin, sugar, cream, condensed milk and chopped chocolate to the cocoa milk.Place a bowl of the mixture over ice and whisk until it cools slightly.Pour the mixture into a baking pan lined with parchment paper and let stand overnight.Sprinkle with cocoa powder before slicing.See as well
