The dish we present to you today is one of those that can solve evenings when you don’t know which way to turn. These are appetizing broccoli-based meatballs .
Who doesn’t like meatballs? By the way, we know, they are also an excellent way to empty the fridge, because they can be prepared with practically everything, and also to make the children eat vegetables.
Let’s see how they prepare now.
The ingredients
For twelve portions we will need: 300 grams of Roman broccoli; 200 grams of chopped fresh parsley; just enough pepper and salt; a drizzle of extra virgin olive oil; breadcrumbs to taste
The preparation
The first thing is to rinse the broccoli thoroughly, after which the florets are obtained, detaching them from the stem and trying to give them an equal shape.
Then take a tall saucepan and pour plenty of water into it; add salt (a little) and then add the broccoli, which should be left to simmer for about twenty minutes or in any case until they have softened enough.
At that point they must be drained and placed in a fairly large boule , after which they are seasoned with salt and pepper and seasoned with minced parsley and garlic, then mix everything with a spoon until a sufficiently homogeneous consistency is obtained.
Now take small quantities from this dough and turn them with your hands to give them the shape of a meatball, which is then dipped in breadcrumbs and placed on a baking sheet lined with parchment paper.
When the dough is finished, wet the meatballs with a drizzle of oil and cook in a preheated oven at 180 degrees for twenty minutes. After ten minutes, the meatballs should be turned upside down to give them uniform cooking.
Once ready they can accompany both a meat and chicken dish: they will be a sure success!
