Water brioche: exceptional but without milk, eggs and butter

Preparing light brioches without milk, eggs or butter is not impossible. Below we explain step by step how to do it.

The procedure is quite simple and with a couple of hours of leavening you will get delicious soft and fluffy sweets, to be served with a good sprinkling of icing sugar and maybe even with a jam or Nutella filling.

It is an excellent idea both for breakfast and as a snack, suitable for both adults and children.

The ingredients

The necessary ingredients are: 340 grams of double zero flour; 150 milliliters of water; 90 grams of granulated sugar; 60 milliliters of seed oil; a sachet of brewer’s yeast; a sachet of vanilla essence.

The proceedings

We start by mixing the yeast and a teaspoon of sugar in a little water.

The water should be used at room temperature or slightly warm (do not overdo it), to facilitate the leavening which will begin shortly thereafter. This is a far from secondary detail.

Now in a planetary mixer, pour the flour, the sugar and then the water, little by little, and finally the seed oil, also little by little. All the liquid ingredients should be added little by little to give the dough time to absorb them well.

The last ingredient to incorporate is vanillin, which is always a good idea to sift to avoid lumps.

You have to work for ten minutes until you get an elastic and velvety mass. the dough is ready when it detaches from the edge of the planetary mixer and begins to wrap itself around the dough hook.

At this point the dough is placed in a boule and covered with transparent film or a clean cloth, after which it is placed in the oven (turned off but with the light on) for at least a couple of hours.

The dough is expected to double in volume. When the leavening is complete, you can start shaping the brioches. Small balls are fine, but you can let your imagination run wild and then choose the shape you like best.

The brioche should be placed on a baking sheet lined with parchment paper and put back into the oven, turned off and with the light on, for another hour. After this time, brush them with a mix of milk and egg yolk and put them in a preheated oven at 180 degrees for twenty-five minutes to half an hour.

Cooking is right when they acquire a nice browning. Then take them out of the oven, let them cool and sprinkle with icing sugar.
