Apple pie, yoghurt, almonds and no eggs
A simple recipe with genuine ingredients, excellent for breakfast and as a snack. Everyone will love it, young and old. If you are intolerant to eggs this recipe is perfect!
There are no particular steps, all you need is a whisk and a manual spatula.
I’ll leave you with the ingredients and the procedure.
For this recipe we will need these ingredients:
- 1 large apple
- 195 grams of 5% Greek yogurt
- 160 grams of 00 flour
- 90 grams of sugar
- 80ml of oil
- 8 grams of baking powder
- 1 organic lemon – zest plus juice
- 60 grams of chopped almonds
- 40 grams of flaked almonds
Procedure:
First, wash and peel an apple, remove the core and cut it into cubes. Squeeze the juice of a whole lemon over it. Let’s keep it aside for a moment.
Put the yoghurt, sugar and oil in a large bowl and mix well using a hand whisk. Stirring constantly, add the zest of a lemon. We sift the flour and the baking powder. We add to the mixture.
Add the apple cut into chunks and the lemon juice. With a spatula, add them to the mixture, then add the chopped almonds. When our dough is well blended, take an 18 cm mold and cover it with parchment paper, or butter and flour it.
At this point, pour the mixture into the mold and cover it with the almond flakes.
We carry in the oven at 180 degrees, static oven or 170 fan oven. We let it cook for about 45 – 50 minutes, we always do the toothpick test as we all know every oven is different.
When our cake is cooked, take it out of the oven, let it cool and sprinkle with icing sugar before serving it.
