Pear cake: ingredients and preparation
For this recipe, get:
- 5 pere
- 75 g of stevia sweetener (or 150 g of regular sugar)
- 250 g of flour
- 100 g of jam with no added sugar
- 80ml of oil
- 3 eggs
- 1 pot of plain yogurt
- 1 sachet of baking powder
- 1 pinch of salt
- just enough vanilla essence
- just enough cinnamon
- just enough powdered sugar
Preheat the oven to 180°, just long enough to reach temperature and the dough will be ready to be baked.
Grease a 22×22 cm square mold on each side. Keep it close at hand.
In a large bowl, break the eggs and add the sugar (or stevia), add the salt and start working everything with the electric whisk.
When the mixture is smooth and uniform, with the whisk moving, pour in the oil slowly and gradually incorporate the yoghurt. Now add the vanilla extract, then sift a part of the flour directly into the bowl and let it absorb, mixing with the whisk. Finish by adding the remaining flour and baking powder until you get a thick, well-bound dough.
Transfer half of it into the pan, level the surface, then bake for just 10 minutes.
In the meantime, wash the pears, dry them, then peel 2 of them and cut them into cubes. Slice the other three into strips without removing the skin.
Remove the base from the oven, brush it with the jam, then distribute the diced pears and cover them with the remaining dough. At this point, decorate with the sliced pears, brush them with more jam, sprinkle with cinnamon and bake for another 30 minutes, always at 180°.
Remove from the oven and let your pear cake cool. Then unmold it and decorate it with icing sugar.
