The dish we suggest today can be prepared with ingredients that are easy to find and which almost always guarantee an excellent result from the point of view of taste.

It is essentially an aubergine quiche that can be served both as an appetizer and as a second course. In the list of ingredients you find Asiago, but it is clear that you can use any other cheese you like.

The ingredients

We need: 250 grams of aubergines; two sausages; 250 grams of cottage cheese; two eggs; 50 grams of leeks; 50 grams of grated Parmesan; a roll of puff pastry (it can be ready); salt, pepper, extra virgin olive oil as required.

The preparation

The first thing is to fry the leek in a pan with two tablespoons of extra virgin olive oil. The leek is cut into thin slices and left to simmer for about a couple of minutes.

Then add the aubergines cut into cubes, a little fresh oregano and a little more oil, then let everything go over a fairly lively flame for ten minutes, let’s say. Stir frequently with a spoon to prevent the aubergines from sticking and/or burning. At the end of cooking, taste everything and add salt if necessary, without exceeding.

While the aubergines are cooking, take another pan and brown the two sausages, after having crumbled them somewhat coarsely. They must be browned well and then reduced to smaller pieces.

At this point, the ricotta, the Parmesan, the eggs, the salt and the pepper are incorporated into a bowl , and when they are cooked right, the sausage and the aubergines are added. This is the filling for our quiche .

At this point, arm yourself with a round pan of about 25 centimeters in diameter and cover the bottom with the puff pastry, which is placed together with its paper.

The dough should be pricked with the prongs of a fork. At this point, pour the filling and level it well. If the pastry advances on the edges, all you have to do is fold it inwards, so as to cover the filling you just poured.

Finally, everything is cooked in the oven at 180 degrees for twenty, twenty-five minutes.
