To make these ricotta balls you will need:
- ricotta, 250 gr
- parsley , 1 fresh bunch
- egg , 1
- salt , 1 pinch
- grated smoked scamorza cheese, 2 tbsp
- grated cheese , 4 tbsp
- breadcrumbs , 70 gr
- seed oil for frying , to taste
Prepare the dough by mashing the fresh ricotta in a bowl with a fork. Also add the egg , the grated Parmesan cheese , a sprig of chopped parsley and a pinch of salt .
Then, mix all the ingredients with a spoon or wooden spoon to obtain a homogeneous and well-compacted mixture . At this point, add the breadcrumbs a little at a time.
In another bowl insert more breadcrumbs for breading. So, start forming balls with your hands and bread them one at a time.
Prepare a non-stick pan with sunflower or peanut oil for frying. When the oil is hot, dip the ricotta balls in it. Remember to turn them well on each side with the help of a fork until they are golden brown. The cooking time varies between 5 and 8 minutes , no more!
Drain them with the help of a slotted spoon and place them on a serving plate lined with a sheet of absorbent paper . Serve hot.
