Is cauliflower one of your favorite vegetables? Here is a recipe that you absolutely must try to cook, to make a delicious and very tasty baked cauliflower. Also suitable for those on a diet, because it contains few calories.

Ingredients for the light version
- 1 kg of cauliflower
- 200ml plain Greek yoghurt
- 125ml of milk
- 1 tablespoon of olive oil
- 50 grams of grated cheese
- 30 grams of type 00 flour
- 5 grams of paprika powder
- 5 grams of baking powder for savory preparations
- 2 whole eggs
- Fine cooking salt to taste
- Freshly ground black pepper to taste.
Clean the cauliflower
Take the cauliflower and remove the tough outer leaves with a knife. Divide the cauliflower into coarse chunks and rinse them under fresh running water.
Cook the cauliflower
Plunge the cauliflowers into a pot full of boiling salted water and cook for about a couple of minutes. They should be soft.
With the help of a slotted spoon, drain the cooking water from the cauliflowers and leave them to cool. When your cauliflowers are cold, cut them into even smaller pieces and place them in a large bowl.
Prepare the batter
In a second basin, break both eggs, add the milk, the olive oil, the yoghurt, the paprika, the fine cooking salt and a grind of black pepper. Beat everything with a hand whisk.
Continue by combining the flour and baking powder, carefully incorporate the two ingredients until you obtain a smooth batter without lumps.

Dial it all
Transfer the batter together with the cauliflower and mix with a kitchen spatula.
Baked Cauliflower: Cooking and serving
Grease a baking dish with a drizzle of olive oil and put the cauliflower mixture inside. Bake everything in the oven at a temperature of 200°C for around 20-25 minutes. Once the cooking time is over, remove the pan from the oven and sprinkle the grated cheese on the surface.
Continue baking for another 5 minutes, or until the cheese has completely melted and a crispy crust has formed. Your baked cauliflower is ready to be served to your guests.
