The side dish is essential to make a meal complete, however, to be honest it is difficult to bring tasty side dishes to the table. It often turns back to fried food to give a little sprint to a not exactly greedy second course, certainly fried foods are very good, but in the long run they damage your figure and health. In order not to give up on taste by bringing something absolutely tasty to the table, let’s try these stringy baked mixed vegetables, we will be pleasantly surprised.

Ingredients for stringy baked vegetables (for about 8 servings)

  • 4 small courgettes,
  • 4 small peppers,
  • 1 cauliflower,
  • 1 broccoli.
  • Sale qb,
  • oil to taste,
  • 180 grams of cottage cheese,
  • a teaspoon of pepper,
  • a sprinkling of mixed aromatic herbs,
  • 80 grams of mozzarella in strips + a handful,
  • 2 cloves of garlic,
  • 3 tomatoes.

Preparation of stringy baked vegetables

Wash all the vegetables, clean them by depriving the zucchini of the ends, remove the cap and seeds from the peppers and leaves and stems from the cauliflower and broccoli. Cut everything into similar pieces, place the vegetables in a baking dish, add salt and finish with a drizzle of oil. We bake in a hot oven, ventilated mode, central shelf at 200° for twenty minutes. The vegetables must remain crunchy. In the meantime, put the ricotta in a container and mix it with the pepper, aromatic herbs, salt, minced garlic cloves and mozzarella. Wash the tomatoes and extract the pulp using a large mesh grater. We also combine this with the ricotta mixture. We mix until we get a sort of cream. Pour it over the still hot vegetables and bake again for another 20 minutes.

When to serve

This warm and stringy side dish is certainly the ideal accompaniment for oven-cooked meats. It is true, however, that given its richness, it can help make even a simple grilled chicken breast less banal. If desired, we can be more generous with the final mozzarella and, perhaps, mix it with a more consistent cheese, such as smoked scamorza, and transform the side dish into a single dish. Whatever way we’re going to present it, it will still be a success that is truly suitable for all palates!
