Baked potatoes with cherry tomatoes and oregano: the peasant recipe!
Baked potatoes arrecanate or raganate are a traditional dish of Basilicata.
Our country reserves truly delicious culinary surprises in every corner of its territory, and Lucania does not disappoint the highest expectations.
It is a so-called “poor” recipe, but full of flavour: the farmers took them with them to the countryside, wrapped in a cloth to keep them warm. Only potatoes, tomatoes, oregano, onions and pecorino cheese for a truly delicious yield, which will truly convince everyone, even the most demanding and refined.
Their name in dialect means “cooked in the oven” or “seasoned with oregano”.

Ingredients and preparation
To prepare this dish for 4 people, get yourself
- onions, 300 g
- potatoes, 800 g
- cherry tomatoes 300 g
- grated pecorino , to taste (if you don’t like the strong taste of pecorino, opt for the Parimgiano)
- breadcrumbs, to taste
- extra virgin olive oil, to taste
- origano, q.b.

Preheat the oven to 160°. Brush a ceramic or glass pan, suitable for cooking at high temperatures, with a drizzle of oil.
Grate the cheese and keep it handy.
Wash the potatoes, pat them dry, remove their peel and cut them into thin slices. Rinse the cherry tomatoes and cut them in half, finally peel the onions and slice them finely. Arrange all the vegetables in the pan, following these steps: start with a layer of potatoes, then add the onions and finish with the tomatoes, adjust the salt, sprinkle with the oregano, pecorino and breadcrumbs. Continue in this order, but finish with the potatoes, pecorino cheese and a drizzle of oil.
Bake for an hour , when the surface is golden brown, extract your very tasty and aromatic side dish and serve it still hot!
