Blueberry sandwiches: ingredients and preparation
For 12 blueberry sandwiches get:
- 60ml of milk
- 2 g of instant yeast
- 15 g of sugar
- 150 g of bread flour
- 2 g of salt
- 1 egg
- 14 g of softened unsalted butter
- milk or beaten egg to brush
Pour the milk into a bowl, add the yeast and sugar, mix with a wooden spoon and leave to rest for 5 minutes.
In another bowl, put the flour, salt, mix the powders, then insert the egg and start working everything with a spatula. Now pour in the leavened milk and mix vigorously.
Add the butter and let it absorb well, when the mixture is well bound, wrap the bowl with cellophane and let it rest for about an hour.
Line a 15×22 cm rectangular mold with the special paper.
After this time, deflate it and dust it with flour, then knead it with your hands on a lightly floured work surface. Fold it several times on itself and create a disc, then divide it into 12 wedges.
Take each of them and create a ball. Flatten it, place a blueberry inside, then close it again. Continue in this way until all the ingredients are finished and arrange the nuggets in the pan well spaced apart. Cover with cling film and leave to rest for another hour in a cool, dry place.
Meanwhile, preheat the oven to 180°.
Take back the mould, the sandwiches will have risen to such an extent that they have joined together. Brush the surface with a drop of milk or with a beaten egg to favor a perfect browning.
Bake for 12/15 minutes, it really depends on the performance of your oven. Do the toothpick test before taking them out of the oven and take them out only if it is dry.
