The fish and zucchini roll is a tasty and versatile dish. Perfect as a light and tasty second course, it can also be served as an appetizer to delight your guests at the Christmas banquet, but not only! Extremely easy to prepare, it is assembled by weaving grilled courgettes around salmon and trout fillets. In less than half an hour you will bring a truly exquisite recipe to the table : slightly spicy, enveloping and truly extraordinary in appearance and flavour. A winning and refined combination: you will fall in love with it!
Zucchini and fish roll: ingredients and preparation.
For this recipe, you will need:
- zucchini, 3
- salmon trout, 2 fillets
- salmon pulp , 350 g
- desalted capers , 15 g
- hot pepper, 1 piece
- chopped fresh parsley , to taste
- extra virgin olive oil , to taste
- fresh mint , qb
- pepe nero in grani qb
- pine nuts, to taste

Preheat the oven to 200°. Line a baking dish with the appropriate paper.
Rinse and dry the courgettes, slice them lengthwise. Turn on the plate, the grill or a non-stick pan and grill them without adding any seasoning. Cook them for just one minute on each side.
Then arrange them on a tray and season them with a pinch of salt, mint and parsley chopped with a crescent, add a drizzle of extra virgin olive oil. Let them marinate for at least an hour.
Clean the trout fillets, removing the bones.
Toast the pine nuts, heating them for a few minutes in the oven.
Transfer them to the food processor, add the capers, chilli pepper, parsley, salmon and trout. Blend everything and adjust the salt.
Take the courgettes and arrange them in the baking dish, one in a row, parallel to the shorter side. Arrange the fish mixture in the center, leaving space around the edges. Grab the outer edges of the vegetables and lift them to completely coat the filling and create a roll. If necessary, use a toothpick to secure everything well. Sprinkle some oregano, season with salt and pepper and bake for 8 minutes.
Remove from the oven and serve still hot and steaming.
