The salted shoe: golden, crunchy, an all-Italian marvel!
The salted shoe is a traditional Tuscan dish that is quite simple to prepare. Thin and super crunchy, it can be prepared in many ways. Below you will find the most common one.
The ingredients
The ingredients we need are:
100 g of flour
80 g of milk
10 courgette flowers
½ kg of zucchini
80 g of grated cheese (40 pecorino and 40 Parmesan)
3 onions
A few basil leaves
80 g of extra virgin olive oil
Pepper as required
2 eggs
Salt as required
The preparation
We wash and dry the courgettes and then cut them into thin slices. Then we take the courgette flowers and remove the pistil, after which we cut the flowers into strips.
We pass the result into a bowl, add the onions that we will have previously sliced, add salt and then mix the ingredients by hand. Let it rest for an hour so that everything releases the vegetation liquid.
In the meantime, let’s prepare the batter
In a bowl we pour the flour and add the eggs, then mix with a fork. We also pour the oil a little at a time and then add the milk as well. When we have a smooth batter without lumps on our hands, we also add the grated cheese.
When the batter is ready, pour it over the courgettes and mix everything well. Then we fix with pepper and a few coarsely chopped basil leaves.
At this point we get a mold and grease it with oil, then we roll out the shoe until it is quite thin. When we have leveled it, season with a drizzle of oil.
Now we put the mold in a preheated oven at 180 degrees for about thirty minutes.
When it appears golden and crunchy, we take it out of the oven and bring it to the table.
