It is a puff pastry that is prepared with an egg. The procedure is not very short, due to the leavening times, but it is not too complex.

The ingredients

For about ten portions you need: 300 grams of flour; 140 milliliters of warm milk; 80 grams of sliced ​​​​butter; 20 grams of condensed milk; 20 grams of stevia (it is a sweetener of vegetable origin) or 40 grams of normal granulated sugar; Salt to taste; an egg.

To brush: 5 grams of stevia (or sugar); an egg yolk.

The preparation

First of all, the classic fountain is made with the flour on a pastry board and the stevia (or sugar), salt, condensed milk and egg are poured into the cone of the “crater”, then the ingredients are mixed with a spatula.

After working a little with the spatula, pour the tepid milk and work again with the spatula, enlarging the crater, after which you start kneading using your hands.

When the dough takes on a smooth and compact consistency, it is sealed with food film and then placed in the fridge for about twenty minutes.

After which, the pastry board is floured again and the dough is rolled out again with a rolling pin until the classic round sheet is obtained.

The preparation Now take the slices of butter and place them on a sheet of parchment paper, then cover them with another sheet and flatten everything with a rolling pin.

When the butter is flattened to the right point, it is spread on the pastry, which is then folded in four and flattened with a rolling pin; then it folds again, this time in two, and covers it with transparent film, after which it is left to rest in the fridge for another twenty minutes.

Now dust the pastry board with flour again and spread the pastry over it, giving it a rectangular shape: then fold it in half, wrap it in cling film and put it back in the fridge for another 20 minutes.

After these other 20 minutes, roll out the dough on a lightly floured surface, give it a rectangular shape and cut it into five strips or strips, which are then rolled up and transferred to a large buttered and floured pan. It is covered with plastic wrap and left to rise for two hours.

After two hours, brush the surface with egg yolk and sprinkle with stevia (or sugar), then bake in a preheated oven at 175 degrees for three quarters of an hour.
