Today’s recipe is for a slightly unusual tiramisu, at least, but very easy to prepare and also light, given that a portion of this dessert “weighs” only 90 calories.
The list of ingredients doesn’t include mascarpone or ladyfingers, but that doesn’t stop this dessert from captivating you with its goodness. You can afford it even if you are on a diet. It can be appreciated both for breakfast and as a snack, but also when you like.
Let’s move on to the recipe.
The ingredients
For about eight slices you need: twenty pavesini; 60 grams of stevia or 120 of normal sugar; 300 grams of light ricotta; 100 grams of Greek yogurt; two egg yolks; sweetened coffee (or sweetened with a few drops of liquid sweetener) to taste; bitter cocoa to taste
The preparation
We start by beating the two egg yolks and the stevia with an electric mixer in a large bowl. The yolks must acquire a frothy and light consistency.
At that point, add the Greek yogurt and work again with the whisk to incorporate it. Once incorporated, add the ricotta as well and work again with an electric whisk.
After a minute or two, we will have a dough with more or less the same consistency as the mascarpone. If desired, a few drops of rum or vanilla essence can be added to the mixture.
Then all that remains is to compose the dessert. We start with a layer of pavesini dipped (quickly) in coffee and continue with a layer of cream, then another of pavesini and so on until there is cream to use.
The last layer must obviously be ricotta and yogurt cream. Then sprinkle the surface with plenty of bitter cocoa and set it to harden for at least a couple of hours in the fridge.
