200 g digestive biscuits
100 g melted butter

Preparation:
Crush the cookies in a food processor or place them in a bag and crush them with a rolling pin until you have fine crumbs. Mix the cookie crumbs with the melted butter until it forms a dough.
Press the cookie mixture into the base of a springform cake pan or individual molds, forming the base of the dessert. Refrigerate while you prepare the filling.
Melt the chocolate in a heatproof bowl. You can do it in the microwave or in a bain-marie. While the chocolate cools slightly, beat the whipping cream until soft peaks form. Add the melted chocolate to the whipped cream with gentle, enveloping movements until well mixed.
Pour the chocolate mixture over the cookie base in the mold. Smooth the surface with a spatula. Slightly warm the dulce de leche or liquid caramel to make it easier to pour.
Pour the dulce de leche or caramel over the chocolate layer, spreading it evenly. Refrigerate the cake for at least 4 hours or until firm.
Before serving, decorate with more liquid caramel or chocolate chips if desired.
