Dinner in a flash with vegetables and cheese: yummy!

Ingredients

You will need:

  • 900 grams of potatoes
  • 250 grams of cooking cream (alternatively you can replace it with the same amount of Greek yogurt)
  • 20 ml of olive oil
  • 5 whole eggs
  • 3 carrots
  • 2 zucchini
  • 2 onions
  • A few pitted green olives
  • A little grated mozzarella (alternatively you can use provolone)
  • A little fresh parsley already chopped
  • To taste black pepper and fine cooking salt
  • To taste paprika powder and tomato paste.

Boil the potatoes

Take the potatoes, remove the peel and divide them into fairly coarse chunks. Place the potatoes in a large pot filled with water, cook and season with fine kitchen salt.

Cook the other ingredients

Put the carrots, courgettes and onions, already washed and grated, in a pan with a non-stick base and brown for a couple of minutes. Add the olive oil, tomato concentrate, paprika powder, fresh parsley and a pinch of fine cooking salt to the vegetables. Mix everything thoroughly, without taking the pan off the stove.

With a knife, cut the olives in half and add them to the rest of the vegetables. Turn off the stove and leave to cool.

Finish the preparation

Break all the eggs into a bowl and beat them with a hand whisk adding the cooking cream. Season with a pinch of black pepper and fine cooking salt.

Add the potatoes and mix well. With baking paper, cover a pan and spread the potatoes on it. With the help of a spoon, take a part of the vegetables and add the potatoes on top, plus the grated mozzarella.

Cooking in the oven

Place the pan in the oven and cook everything at a temperature of 200°C for about 15 minutes. Bring to the table, your dinner with vegetables and cheese, cut into slices.
