Beef barbacoa is a traditional Mexican dish that stands out for its deep flavor and soft, tender texture. Ingredients: 1 kg beef (preferably brisket, but you can also use chuck or brisket), 1 large onion, chopped, 4 cloves garlic, chopped, 2 bay leaves, 2 tablespoons apple cider vinegar, 2 tablespoons oil vegetable, 2 teaspoons of ground cumin, 1 teaspoon of dried oregano, 1 teaspoon of paprika, 1/2 teaspoon of ground cloves, 1/2 teaspoon of cinnamon powder, Salt to taste, Black pepper to taste, 2 cups of broth beef or water.

Preparation: In a large pot, heat the oil over medium-high heat. Add the chopped onion and garlic and cook until golden and fragrant. Add the beef to the pot and sear all sides until golden brown. Add the apple cider vinegar and scrape up any browned bits from the bottom of the pot with a wooden spoon. This will add flavor to the barbecue. Add the bay leaves, cumin, oregano, paprika, ground cloves, ground cinnamon, salt and black pepper to taste. Mix well to coat the meat with the spices. Pour the beef broth or water into the pot until the meat is covered. Reduce the heat to medium-low, cover the pot, and simmer for about 3-4 hours, or until the meat is tender and can be easily shredded with a fork. Stir occasionally and add more liquid if necessary to keep the meat covered. Once the meat is ready, remove the bay leaves and shred the meat with a couple of forks.
