Base for gluten-free pizza. With only 240 calories!
Today’s recipe is one that seems to have been made especially for a Saturday night full of tasty and light goodness. It’s a zucchini and potato pizza that goes very well with a relaxing evening, sprawled out on the sofa watching the latest TV series or the game of your favorite team.
The dough is gluten-free and very light and everyone can be enriched as they like: zucchini and potatoes, of course, but also any other vegetables (and/or cheese) to taste.
In short, with this colorful magnificence we are faced with yet another proof that health-friendly choices can be made in the kitchen without sacrificing taste and goodness.
But let’s get to the recipe.
Gluten-free pizza base. The ingredients
For two-pizza-two the necessary ingredients are the following: 200 grams of potatoes; the same amount of zucchini; 30 grams of rice flour; half a pound of smoked scamorza cheese; an egg; just enough of the spices of your choice.
The first thing to do is grate the courgettes and potatoes after having washed and peeled them. Then they are placed in a fairly large boule with a little salt. They are left to rest for about a quarter of an hour/twenty minutes and then drained and squeezed, after which they are placed on top of a clean tea towel so that they dry as much as possible.
When the potatoes and courgettes are dry, pass them into a clean container and add the grated scamorza cheese, the egg, the spices and the rice flour.
At this point, all that remains is to get a rolling pin and pastry board and work the dough until you get the dough for our two pizzas. These pizzas are then placed on a baking sheet covered with parchment paper, which is then cooked at 200 degrees for about ten minutes.
They will be ready to take out of the oven when a spectacular golden crust forms on the surface. at this point they can be garnished with all the ingredients you want, it depends on everyone’s taste.
Once the garnish is done, they are put back in the oven for another five or ten minutes. Of course, the time will depend on the ingredients you have chosen as a topping.
