Salmon baked in aluminum with asparagus and lemon garlic sauce

Ingredients:

•4 salmon fillets

•1 bunch of asparagus,

•2 tablespoons of olive oil

Salt and pepper to taste

•2 cloves of garlic, minced

Zest of 1 lemon

Juice of 1 lemon

•2 tablespoons unsalted butter, melted

•1 tablespoon chopped fresh parsley

Lemon slices to garnish

Instructions: 

Preheat your oven to 375°F (190°C).  Place each salmon fillet on a piece of aluminum foil large enough to wrap the fish and asparagus.  Prepare a few asparagus spears next to each salmon fillet.  Drizzle olive oil over the salmon and asparagus, then season with salt and pepper to taste.  In a small bowl, mix together the minced garlic, lemon zest, lemon juice, melted butter, and chopped parsley.  Spoon the lemon garlic sauce evenly over each salmon and asparagus fillet.  Wrap the aluminum foil tightly around the salmon and asparagus to form packets.  Place the foil packets on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and cooks easily with a fork. Carefully open the foil packets and transfer the salmon and asparagus to serving plates.  Garnish with lemon wedges and additional chopped parsley, if desired.
