Pasta matta is nothing more than a truly ingenious dough, exquisite at the same time, capable of replacing puff pastry, shortcrust pastry or brisé in an excellent way in recipes that require its presence.
Very quick to make, it does not require leavening or firming time in the refrigerator and in a flash you can bake tarts, pizzas, pretzels and strudels of the highest cuisine.
Very few ingredients, all easy to find, absolutely lactose-free, if you want a base that can also be used by people with celiac disease, do not resort to gluten-free flours and you will bring to the table a small masterpiece suitable for everyone.

Crazy pasta: ingredients and preparation
For this recipe, get:
- dry white wine , 80 ml
- white flour , 210 g
- seed oil , 80 ml
- salt or sugar (depending on the taste of your preparation), 10 g.
Flour the work surface and get to work; sift the flour directly into a bowl. In another bowl, add the wine and oil, then add the flour, mixing gradually with a wooden spoon. Do it a little at a time to make it absorbed well, when the dough appears firm and compact, move it onto the pastry board and work it all directly with your hands.
At this point, depending on the recipe you intend to make, add the salt or sugar and knead vigorously for a few minutes, until the consistency is very soft and not sticky at all. Here, then, is your mad pasta ready.
Now, if you want to bring a dessert to the table, roll it out with a rolling pin. Line a tart pan with the special paper and cover it with the dough, making it adhere perfectly to the bottom and edges. Prick it with the prongs of a fork and fill it with jam of your choice, custard and apples, Nutella and anything else you like. Bake it for 35 minutes at 180°.
If, on the other hand, you prefer to dedicate yourself to making delicious pretzels, thin it out until it is less than a centimeter thick, then cut it into strips and wrap it around the frankfurters. Bake them for a good half hour at 180°…
