FRIED RICE WITH SHRIMP

2 beaten eggs

1 carrot cut into small cubes

1 green pepper cut into cubes

1 red pepper cut into cubes

1 cup peas (optional)

3 tablespoons vegetable oil

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Chopped fresh chives to decorate

Instructions:

In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the pan and place them on a separate plate.

In the same skillet, add another tablespoon of oil and sauté the chopped onion and garlic until golden and fragrant, about 2 minutes.

Add the carrot, peppers and peas (if using) and sauté for about 3-4 minutes, or until the vegetables are tender but still crisp.

Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Stir the eggs with a spatula until they are cooked, then mix them into the vegetables.

Add the cooked rice to the pan and mix well with the vegetables and eggs. Pour the soy sauce and oyster sauce (if using) over the rice and mix until well combined.

Add the cooked shrimp back to the pan and cook everything together for a few more minutes, making sure everything is heated through.

Taste and adjust seasoning with salt and pepper as needed. Sprinkle with fresh chopped chives before serving.
