Today’s recipe is a pan-fried apricot cake. It is a dessert with a delicate taste and which contains a very peculiar softness. It can melt in your mouth, and it’s not a figure of speech.
Among other things, you can bring it to the table using very common ingredients and therefore can really be found in almost all pantries. In terms of tools, then, a frying pan, a hand whisk and a fairly capable boule are enough.

The ingredients
We will need:
220 g of flour
10 g of vanilla sugar
6 g of baking powder
150 g of milk
200 or 300 g of apricots
100 g of sugar
the grated rind of a lemon
50 g of vegetable oil
just enough salt
a couple of eggs
The preparation
The first thing to do is cut the apricots in half and remove the stone. The next move is to recover a pan with a diameter of about twenty-five centimeters and grease it with butter. Once this is done, we place the apricots: we must make sure that the pulp is facing the lid.
At this point we break the two eggs into a fairly large bowl and then add the salt, the normal sugar (granulated) and also the vanilla sugar. Then continue with a drop of oil, with the grated rind of a lemon (preferably untreated) and with the milk.
It should all be mixed at a good pace with a hand whisk, which won’t be as fast as an electric one but is certainly more fun to use.
After we blend for a while, we also add the flour, to which we will also have added the baking powder. As is good practice, we do it a little at a time, obviously starting to mix everything again.
When the dough is ready, all we have to do is pour it over our apricots that we had left in the pan.
Cooking
At this point, put the lid on the pan, adjust to a gentle flame and let everything go for about twenty minutes. Assuming that your lid is transparent, when it condenses, all you have to do is dry it with a cloth and then put the lid back on.
When the twenty minutes are gone, we will have to put the dessert upside down with the help of a plate, after which we cook it for another twenty minutes.
After these additional twenty minutes, we can do the classic toothpick test to check the doneness. If the toothpick comes out dry, the cake is ready.
