Preparation of the chard fritters
- First, we wash all the chard leaves very well and separate them from the stalks. (We can save them for another dish).
- Then in a pot with enough water we add the chard leaves and leave it until it comes to a boil.
- When the chard is finished cooking, we let it drain well.
- On the other hand, chop the onion and garlic cloves very finely and then place them in a frying pan with a splash of oil.
- Meanwhile, we stir so that it does not burn and when the onion becomes transparent, we remove it from the heat and let it cool.
- On the other hand, we beat the eggs in a bowl and add the previously chopped chard.
- Also the onion and garlic that we cooked in the pan, the cheese, half a glass of milk and season with salt and pepper.
- We mix all the ingredients and as we do it we add the flour little by little, if it is too thick we can add a splash more milk.
- Next step, add enough oil to a frying pan and put it over moderate heat. When it is very hot we are going to fry the fritters.
- Using a spoon would be the ideal measure of the fritters that we are going to add to the pan and leave it until they turn golden brown on both sides.
- Something we generally do is let them rest on a tray with absorbent paper, precisely to remove excess oil.

Tricks and Tips so that they do not come out oily
- A basic trick, the oil has to be very hot so that the fritter does not come out too oily.
- Another recommendation is not to fry too many fritters at the same time, because in this way the temperature of the oil is lowered and it ends up getting thick and reaches the fritter.
- Another way that is usually used is as we remove the fritters from the pan, place them on a tray with kitchen paper to remove excess oil. Obviously it doesn’t take away all of it, but it helps a lot to keep them dry.
- Finally, we can use a less thought-out trick. It involves adding a few drops of lemon or vinegar to make them a little acidic, which will help the fritters come out more dry.
