Ingredients

  • 1 kg of figs
  • 1 liter of water
  • 700 grams of sugar
  • Half a lemon peel

Preparation: easy Time: 2h 15m (it takes 2 hours to boil). Yield: one 3 liter jar.

Elaboration

  1. Remove the stems from the figs, wash them very well and drain them.
  2. Take a large pot, place the figs and add the water. It is important that the water covers all the figs well.
  3. Bring to a boil over medium to high heat.
  4. When the water comes to a boil, continue for a few more minutes so that the figs release white sap, thus making a white foam in the water.
  5. Remove that white foam, remove the figs from the water and set aside.
  6. Bring the liter of water to medium-high heat along with the sugar and lemon. Then, prick each fig with a fork and add them. Let cook for 2 hours.
  7. After these two hours, when the figs are very tender, they should be allowed to cool to room temperature. Then, they should be transferred to previously sterilized glass jars (passed through soap and water and then boiling water) and tightly covered.
  8. Dessert ready to eat.
