The cake that we offer you today may perhaps relieve you of the embarrassment. Sure it’s original, sure it’s good. Don’t worry: it won’t make you look bad.
But let’s get to the point, or rather the recipe for this unusual delight.
The ingredients
For 15 portions, the ingredients are these: 360 grams of flour; 200 milliliters of milk; 100 milliliters of seed oil; 100 grams of plain yogurt; 80 grams of stevia (or 160 grams of normal granulated sugar); 15 grams of instant coffee, the one you prefer; 10 grams of baking powder; three oranges; three eggs; the grated zest of an orange.
For garnish: 300 milliliters of warm milk; 10 grams of grated coconut (but you can do without coconut).
The preparation
The first thing is to peel the oranges, cut them into small pieces, eliminating the white and fibrous parts, and then blend them in a boule with an immersion mixer.
Then the eggs are worked together with the stevia and sugar, with an electric whisk. When the egg-sugar mixture acquires a light and frothy consistency and a light colour, add the oil, milk, yoghurt, grated zest and orange juice.
Everything is mixed carefully using a hand whisk. The yeast and flour, duly sifted, should also be added a little at a time to the mix.
Once this is done, butter and flour a pan and pour three quarters of the mixture into it, distributing it and leveling it evenly.
The instant coffee is added to the leftover part and stirred until it melts, then with a spoon the fourth cup of coffee is poured into the above mixture and incorporated with a kitchen spatula.
At this point it is placed in the oven at 170 degrees for about forty minutes.
When the cake is cooked, sprinkle it with cold milk, a little at a time, and then, if you like, sprinkle it with coconut.
