Today’s recipe is a classic Sicilian that is not made with breadcrumbs, as the name might suggest, but with the crunchy crust with which breadcrumbs are made. Indeed, it is toasted breadcrumbs, made by putting the scraping of the bread crust in the oven for six minutes and 180 degrees.

Let’s see how it’s done.

The ingredients

For this recipe we need:

breadcrumbs, 150 g
peppers, six
white onions, a
parsley, a bunch of
raisins, two tablespoons (not essential)
extra virgin olive oil, 5 tablespoons
salt,
pepper to taste,
warm water to taste, half a glass plus more for the raisins

The preparation

The first thing to do is to fry the onion in a pan in which we have poured a drizzle of oil: the onion must be finely chopped.

While the onion is browning, wash the peppers thoroughly, dry them with kitchen paper, cut off the upper part and remove the internal filaments, then cut them into strips three or four centimeters wide.

Now these strips are poured into the pot above and softened, while a little water is also poured into the pan. Then it is covered and cooked for about thirty minutes, turning from time to time with a wooden spoon.

Now the raisins are rehydrated in a bowl for about ten minutes, after which they are squeezed and dried with a certain delicacy. Then take the parsley and chop it finely enough with a crescent moon and set aside.

At this point, turn off the gas, add the raisins to the peppers, mix a little and then sprinkle everything with breadcrumbs and parsley. Let everything cool down and then serve it on the table.
