Today’s recipe is for a very simple dessert, but also very substantial and good. You can enjoy it in the morning for breakfast, but it will also be fine in the mid-afternoon for a tasty and delicious snack.
Let’s see how it prepares.
The ingredients
We need:
- 260 g of flour
- two whole eggs
- 195 g of sugar
- 220 g of raw pumpkin
- a sachet of baking powder
- 120 ml of seed oil
- 90 g of raisins or chocolate chips (your choice)
- 1 pinch of salt
- powdered sugar to decorate
The preparation
The first thing is to put the raisins in water and rum. Leave it to soak for a moment and remove the excess flour and continue the recipe.
Now we take the pumpkin and cut it into chunks with a knife, then pour it into the glass of a blender and reduce it to a puree which we pour into a bowl.
Now in a larger bowl we break two whole eggs and whisk them with an electric mixer together with 195 grams of granulated sugar. When we have a frothy and light colored compound, we pour the blended pumpkin into it. Let’s blend again.
Then we pour 120 ml of seed oil, always with the mixer running, and add just enough of the zest of a lemon. Now we add 260 grams of sifted flour and a sachet of baking powder, then add salt.
Now we recover the raisins from the fridge, drain them, stir them and add them to the dough, after which we pour this dough into a loaf pan lined with baking paper.
Now we cook in a static oven at 180 degrees for 40 minutes; or at 170 degrees in a convection oven. Remove from the oven and sprinkle with icing sugar.
