Ingredients
- 1 chicken cut into pieces or 8 chicken drumsticks
- 1 large onion
- 3 cloves of garlic
- 2 candied lemons
- 1 pinch of saffron pistils
- 1 teaspoon of ginger
- 1 teaspoon of turmeric
- 200 g green olives
- 2 tablespoons chopped coriander
- 2 tablespoons chopped flat-leaf parsley
- 4 tablespoons of olive oil
- Salt and pepper
Preparation
- In a tagine or in a pot, put the olive oil, add the finely grated onion, let it melt a little then add the washed and drained chicken pieces, the saffron, the ginger and the turmeric.
- Brown for 5 minutes over medium heat, turning the chicken regularly. Add the chopped garlic cloves, chopped herbs, salt, pepper then pour in boiling water.
- Cover and cook for approximately 40 minutes.
- Remove the chicken from the casserole, add the olives and lemon wedges, washed briefly under water to remove excess salt, then simmer for 10 to 15 minutes uncovered so that the sauce reduces.
- Brown the chicken in the oven by brushing it with a little butter.
- In the serving dish, arrange the chicken pieces, add the olives and candied lemon wedges then drizzle with the sauce.
