Parmesan meatballs: very easy, you’ve never eaten them so good!

Parmesan meatballs: an original way to eat meat!

To prepare these meatballs you will need :

  • minced meat , 500 gr
  • eggs , 2
  • stale crustless bread , 2 slices
  • aubergines , 2
  • grated parmesan, 100 gr
  • tomato puree , to taste
  • garlic, 1 clove
  • mozzarella, 150 g
  • sale, q.b.
  • ground black pepper, to taste
  • extra virgin olive oil , to taste
  • sunflower or peanut oil, for frying

Start by soaking the two slices of bread in water . Then, dedicate yourself to the aubergines, then wash them, cut the ends, cut them into cubes and soak them in water and salt for about 30 minutes.   Once the time has elapsed, drain  and dry them with a clean kitchen towel.

Subsequently, add the seed oil to a large saucepan, turn on the gas, as soon as it starts to sizzle, lower the heat to a minimum and fry the aubergines .

As soon as they are cooked, transfer them to a plate lined with a sheet of absorbent paper . At this point , squeeze the bread well and pour it into a bowl. Then add the minced meat and the eggs (slightly beaten) with salt and pepper and mix everything together. Lastly, also incorporate the grated Parmesan cheese , the aubergines and mix all the ingredients well until a homogeneous mixture is obtained .

Start forming meatballs, being careful to make a hollow in the center of each meatball in which you will place a piece of mozzarella . Close, forming balls and transfer them to the refrigerator .

Take a large saucepan again, fry the garlic clove in extra virgin olive oil. Then add the tomato purée , season with a little salt and cook for 5-10 minutes over medium heat .

After the time has elapsed , add the meatballs and let them go over low heat for another 15 minutes with the lid on. At the end , serve on a hot dish! Enjoy your meal!
