INGREDIENTS :
500 g (4 cups) all-purpose flour
50 g (1/4 cup) sugar
10 g of fresh yeast
1 lemon (zest)
1 orange (zest)
1 egg
210 ml (3/4 cup) water
4 g of salt
40 g butter (soft)
Hazelnut cream
Oil for frying

PROCESS :
- In a bowl, add the flour, sugar, yeast, lemon (zest), orange (zest), egg, water, salt and butter and mix. When the dough begins to form, knead with your hands to obtain a smooth dough. Cover with cling film and leave to rise for 2 hours, or until doubled in size.
- Once the time is up, divide the dough into two halves. Spread the first half and use the heart-shaped mold (10 cm mold) to make the shapes.
- Transfer them to the baking tray lined with parchment paper and with the smaller heart-shaped mold, prick the central part. Cover with a cloth and let rise for 1 hour.
- Roll out the other half of the dough and divide it into several parts. Spread the hazelnut cream on a piece of dough and cover with another, sealing the edges well.
- Cut the dough with the heart mold and transfer them to the baking tray lined with parchment paper. Cover with a cloth and let rise for 1 hour.
- Once the time is up, transfer them to the pan with hot oil and fry until golden brown.
- Cover the heart-shaped donuts with sugar and serve.
