It is a variant of the classic amaretti , the famous almond-based biscuits, made even more fragrant by the addition of lemon zest.
Quick and easy to make , just blend the almonds and sugar in a kitchen mixer until they are reduced to powder; the egg whites and the aroma of bitter almonds are incorporated, essential for giving the biscuits their characteristic flavour, then they are enriched with the grated lemon zest .
Once you have obtained a malleable but not too sticky dough, form many balls, sprinkle with a little icing sugar and finally bake in the oven. The result is sweets with a citrus fragrance, crunchy on the outside and tender to the bite , suitable for any time of the day, even as an after-dinner cuddle.

How to prepare lemon amaretti

Step 1
In a kitchen mixer collect the almonds1.

Pour sugar2.

Blend until the almonds are reduced to powder3.

To obtain a soft dough, always choose whole ground almonds : in fact, ready-made almond flour could make the amaretti too dry. For this recipe, use organic lemons with edible zest.

Lemon amaretti can be kept for a week in a tightly closed glass container or tin box. It is also possible to freeze raw amaretti, placing them in the freezer on a well-spaced tray and, once frozen, in the appropriate freezer bags.
