A very simple cake to prepare, which is both soft and perfect to combine with different fillings is the sweet Danube. Here is the recipe to be able to cook it.
Ingredients:
To prepare Sweet Danube, you will need:
- 530 grams of Manitoba flour
- 230 ml of whole milk
- 50 grams of butter
- 50ml of water
- 30 grams of white table sugar
- 10 grams of fine cooking salt
- 4 grams of brewer’s yeast powder
- One whole egg
- A vanilla pod
- The peel of an organic lemon.
Ingredients for making pastry cream
To prepare the custard, you will need:
- 200 ml of whole milk
- 70 grams of white table sugar
- 50 ml of fresh cream
- 25 grams of corn starch
- 3 egg yolks
- A vanilla pod
- The peel of an organic lemon.
Other ingredients
For the worktop, you will need: olive oil or a little flour.
To enrich the dessert before baking it, you will need:
- 15 ml of whole milk
- 1 whole egg
- To taste of butter (to be cut into small pieces)
- White table sugar to taste
- Powdered sugar to decorate the dessert after cooking (optional)
The doses indicated are for about ten people.
How to cook sweet Danube: making the dough
Place the butter in a container suitable for microwave cooking and melt. Meanwhile with a knife, extract the seeds from the vanilla pod.
put the vanilla seeds, the grated lemon peel, the white table sugar, the powdered brewer’s yeast, the sieved flour into the bowl of the planetary mixer and start the appliance.
Add the whole egg, melted butter and milk. Mix again with the planetary mixer until a solid dough is obtained. Combine the water and salt, without ever ceasing to mix.
How to cook sweet Danube: leavening
Grease the work surface with a drizzle of olive oil and place your dough on it. Knead the mixture with your hands to give it the shape of a sphere and place it in a bowl. Cover the container with a piece of cling film, place it in the oven with the light on and wait a couple of hours for it to rise.
Prepare the cream
Put the cream, the milk, the seeds of the vanilla pod in a saucepan with the grated lemon peel and cook over low heat.
Separately put the sugar with the egg yolks, mix thoroughly and then add the corn starch (previously passed through the sieve). Add the milk to the mixture and mix until you get a smooth cream without lumps. Place the cream in a bowl and cover it with transparent food film.
Shape your cake
Sprinkle the work surface with a little flour and roll out the mixture into an elongated shape.
Using a knife, divide the mixture into about thirty pieces of about 30 grams each. Roll out each piece, fill it with a little custard and close it, being careful not to let the filling out.
Repeat the steps for the other pieces as well. Cover a square pan with a piece of baking paper and place all the pieces next to each other inside. Cover the cake with a piece of cling film and wait another hour for it to rise.
Cooking in the oven
In a bowl, break an egg and add the milk. Beat the two ingredients and with a kitchen brush, spread the liquid over the cake. Sprinkle the surface of your cake with small pieces of butter and a little white table sugar.
Bake in a preheated oven at a temperature of 180°C for half an hour.
Serve on the table
When your dessert is cooked, wait for it to become warm before sprinkling it with icing sugar and serving it.
Your guests will have to take their own portion directly with their hands.
