Roast pork in mustard cream sauce
Ingredients :
1 kg roast pork (upper side)
1 small apple, roughly diced
1 small onion(s), finely diced
800 ml roast stock
150 ml cream
2 tbsp orange mustard
1 tbsp lemon juice
2 tbsp fat for roasting
Salt and pepper
Sauce thickener if necessary
preparation
Season the roast pork and fry in the frying fat. Add the diced onions and apples and sauté briefly. Stir in the mustard, roast briefly and then add the lemon juice.
Pour in the stock and let everything simmer, covered, for about 1.5 hours. Finish off with cream and spices to taste. If necessary, thicken with sauce thickener.
Serve with red cabbage and dumplings.
