Vegetable pancakes: the recipe for simple and crunchy pancakes

Vegetable pancakes are a simple and crunchy appetizer , an easy and tasty way to get children to eat vegetables. To make them, all you need is grated vegetables , flour , egg and herbs: in our recipe we used carrots,  zucchini and onion and flavored the mixture with turmeric , but you can choose the seasonal vegetables you prefer and replace the turmeric with paprika , walnut moscata , curry or with the spice you like best. Once the pancakes are formed, they will befried in very hot seed oil until golden brown or cooked in the oven , for a lighter preparation.

How to make vegetable pancakes

Grate the zucchini1, the carrot2and the onion. Put the grated vegetables, egg, salt, pepper, turmeric and flour in a bowl3.

Mix all the ingredients well4. Pour oil into the pan and fry the pancakes on both sides until golden brown5. For cooking in the oven, shape the fritters with a spoon, arrange them on a baking tray lined with parchment paper and cook at 180°C for about 20 minutes. The vegetable pancakes are ready to be served6.

Vegetable fritters can be stored in the refrigerator for 1-2 days in an airtight container. Reheat them in the oven or pan before serving.
